  • 1/2 c. white wine
  • 4 tsp extra virgin olive oil
  • 1 x onion, finely, minced
  • 1 clv garlic, chopped
  • 3/4 c. pearl barley, rinsed
  • 1/4 tsp pepper
  • 1 pch salt
  •     Curry Sauce
  • 1 Tbsp. butter
  • 1 x shallot, finely, minced
  • 1/2 c. white wine
  • 1/3 c. white wine vinegar
  • 4 c. unsalted chicken stock
  • 1/2 c. whipping cream
  • 1 Tbsp. curry paste or possibly 1 tbsp curry pwdr
  • 1 1/2 tsp chopped fresh tarragon
  •     Arctic Char
  • 2 tsp vegetable oil
  • 2 lb arctic char, fillets
  • 1 pch salt
  • 1 pch pepper
