Aubergine Parmesan Recipe


  • 1 med Aubergine - (abt 1 lb)
  • 2 med Tomatoes minced
  • 2/3 c. Vegetable juice, low-sodium
  • 1/2 c. Quaker Oat Bran cereal uncooked
  • 1/4 tsp Crushed oregano leaves
  • 2 x Garlic cloves chopped
  • 1/4 c. Shredded mozzarella cheese, part skim lowfat milk
  • 2 Tbsp. Grated Parmesan cheese
