  • 2 tsp Coarse salt, for sprinkling
  • 2 Tbsp. Black mustard seeds
  • 6 Tbsp. Clarified butter
  • 1 lrg Onion, diced
  • 1/2 tsp Salt
  • 2 Tbsp. Pureed garlic
  • 2 Tbsp. Freshly-grated ginger
  • 1 tsp Grnd cumin
  • 1/2 tsp Grnd coriander
  • 1/2 tsp Grnd cardamom
  • 1/2 tsp Garam masala
  • 1/4 tsp Turmeric
  • 1/4 tsp Grnd cloves
  • 1/4 tsp Cayenne
  • 2 x Tomatoes, peeled, seeded,
  •     And diced
  • 1 c. Water
  • 1 Tbsp. Palm or possibly brown sugar
  • 2 bn Spinach, stems removed,
  •     Washed, and cut in 2" pcs
