Asparagus Pasta Salad Recipe


  • 3 ounce Dry angel hair pasta
  • 1 lb Asparagus, cut diagonally into 2 inch pcs, (I got 10 ounces after breaking off the tough lower stalks)
  • 3 ounce Red onion, sliced and quartered, (about 1/2 c.)
  • 6 x Canned artichoke hearts, quartered
  • 1 c. Unsweetened frzn blackberries, thawed
  • 3 Tbsp. Raspberry vinegar
  • 2 x Sweet n'Low packets, (or possibly 1 Tbsp. sugar if you prefer)
  • 1 tsp Salt
  • 1 tsp Fat free Italian dressing
  •     Couple twists of grnd pepper


Break Pasta Into One To One And One-half Inch Pcs. Cook In Boiling Water For About 5 Min Or Possibly Till Done The Way You Like Them. Rinse With Cool Water And Set Aside. Place…
