- 1 lrg Aubergine, peeled
- 2 med Onions, diced
- 1 can Tomato paste
- 1/2 c. Skim lowfat milk
- 1 x Egg, or possibly 2 whites
- 1/4 c. Parmesan cheese, grated
- 1 x 9-inch pie crust, or possibly bread crust
Description
Slice And Salt Aubergine. Let Drain 1/2 Hour. Squeeze Dry. Saute/fry Onions, Add In Aubergine And Saute/fry 5 Minutes. Add In Tomato Paste, Simmer 5 Minutes. Spoon Into Pie Shell.…
