  • 12 ounce dry egg noodles
  • 8 ounce snow peas
  • 1 med red bell pepper julienned
  • 2 med carrots julienned
  • 2 x scallions, white and light green parts sliced
  • 1/2 c. cashews (optional)
  • 2 Tbsp. peanut oil
  • 1 x garlic clove chopped
  • 1 x green chile pepper seeded, chopped
  • 4 ounce fresh shiitake mushrooms stemmed, sliced
  • 3 Tbsp. rice wine vinegar
  • 2 tsp chopped fresh ginger
  • 1 Tbsp. hoisin sauce
