Eggplant Parmesan Recipe

Ingredients

  • 1 eggplant, sliced 1/4-inch to 1/2-inch thick
  • 6 eggs
  • 2 c. Italian bread crumbs
  • 2 c. Panko
  • 1/2 c. olive oil (may use Extra-Virgin Olive Oil)
  • 1 T. Italian Seasoning
  • 2 tsp. garlic salt
  • 1 to 2 c. marinara (use your favorite recipe)
  • Angel hair pasta
  • 1/2 c. to 1 c. frozen peas
  • 5 to 6 T. freshly grated Parmesan cheese
  • 3 T. freshly shredded mozzarella cheese
