Ingredients

6 Risotto for
8 cups chicken stock
1/4 cup butter
2 tablespoons extra virgin olive oil (evo)
2 cups finely chopped onions
2 garlic cloves, minced
1 1/2 cups Arborio Rice
2/3 cup DRY white wine
3/4 cup peas
2/3 cup grated Parmesan
1 bay leaf
salt& pepper
1 egg yolk
3 tablespoons heavy cream
20 Arancini- yields small
Choice oil for frying, the higher the smoke point, the better
3 eggs
1/2 cup grated Parmesan cheese
1 1/2 cups dried Italian style breadcrumbs
1 cup all purpose floor
cup heavy cream
2 ounces fresh mozzarella, cut in ½ inch cubes
2 ounces prosciutto
