Salmon Wontons

Ingredients

12 fresh or dried shiitake mushrooms
1 pound salmon fillet skin and bones
removed
1 pkt wonton wrappers - (12 oz)
Salt to taste
Freshly-ground black pepper to taste
cup cilantro leaves - (loosely packed)
1 teaspoon cornstarch mixed with
1 tablespoon water plus extra
Cornstarch for dusting
1 tablespoon vegetable oil
1 tablespoon slivered ginger
4 garlic cloves chopped
1 medium red bell pepper cored, seeded
and cut into 2" long matchsticks
1 small can baby corn on the cob - (5 ½ oz) drained
3 green onions thinly sliced
on the diagonal
cup chopped cilantro or slivered basil
cup mirin (Japanese sweet cooking wine)
2 tablespoons soy sauce/ preferably reduced-sodium
2 tablespoons water
1 tablespoon sesame oil
