Pie Crust
1/4 cups all purpose flour, plus more for rolling the dough
1 stick (1/2 cup) cold unsalted butter, cut into small pieces
1 tablespoon sugar
1/2 teaspoon salt
3 to 4 tablespoons ice water (Add an ice cube to keep the water cold but don’t add cube to mix)

Pumpkin Puree
1 sugar pumpkin (3 1/2-4 lbs)

¾ cup packed light brown sugar (1 cup for 12-inch pie)
2 large eggs
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1/4 teaspoon nutmeg
3/4 cup homemade puree or canned pumpkin (1 cup for 12-inch pie)
3/4 cup heavy whipping cream (1 cup for 12-inch pie)

1/4 cup chopped pecans
1/4 cup packed light brown sugar
1/2 teaspoon ground cinnamon
pinch of kosher salt
