Ingredients
Good old chicken pot pie filling topped over butter brushed toasted hotdog rolls! Came up with this recipe as i was cleaning the pantry! Hehe.. Still as comforting as the original during this cold rainy days here. Any crusty bread, to my opinion, would work fine for this recipe. This yields about 3-4 servings.
- 3 boneless, skinless chicken thighs (dark chicken meat is just a personal preference. use white if you want.)
- 1 cup frozen mixed veggies (diced carrots, corn & peas mix)
- 3/4 cup full cream milk
- 1/2 cup chicken stock
- 2 cloves garlic minced
- 1 medium size white onion diced fine
- 1 tbsp. flour
- oil for frying the chicken
- butter (i used about 1/4 of a stick)
- hotdog rolls (or other bread if you prefer)
- salt and pepper to taste
