- 3 tbsp shaoxing rice wine
- 2 tbsp soya sauce
- 1 tbsp oyster sauce
- pinch of salt
- 1 tsp freshly ground black pepper
- small handful of spring onions, finely chopped, plus extra 2 tbsp for garnishing
- 1 tbsp brown sugar
- steamed jasmine rice to serve
