• 3 red peppers

• 1 fennel bulb

• 1-2 tbsp olive oil

• 300g/10½oz mashed potato

• 1 garlic clove, peeled, crushed

• 100g/3½oz breadcrumbs

• 4-6 tbsp olive oil

For the fish cakes

• handful parsley stalks, plus large handful flat-leaf parsley leaves, chopped

• 1 lemon, zest only, plus juice from ¼ lemon

• salt and freshly ground black pepper

• 250g/8¾oz coley or cod fillets

• 300g/10½oz mashed potato

• salt and freshly ground black pepper

• plain flour, for dusting

• 2 free-range eggs

• 100g/3½oz breadcrumbs

• 4-6 tbsp olive oil

For the black pudding cake

• 7 tbsp olive oil

• 200g/7¼oz black pudding, cut into slices

• 300g/10½oz mashed potato

• 150g/5¼oz Bramley apples, peeled, cores removed, grated

• plain flour, for dusting

• 2 free-range eggs (if necessary)

• 100g/3½oz breadcrumbs (if necessary)

For the plum chutney

• 1 tbsp olive oil

• 1 red onion, peeled, chopped

• 100ml/3½fl oz red wine vinegar

• 150g/5¼oz caster sugar

• 2 star anise

• 1 cinnamon stick

• 450g/1lb plums, cut in half, stones removed, finely chopped

For the coriander relish

• bunch coriander stems, finely chopped

• pinch sea salt

• 1 tbsp caster sugar

• 100ml/3½fl oz white wine vinegar

• salt and freshly ground black pepper

For the vegetable pickle

• ½ cauliflower head, core removed, cut into small florets

• 1 carrot, peeled, diced

• 1 tbsp olive oil

• 1 red onion, peeled, finely chopped

• 200ml/7¼fl oz white wine vinegar

• 150g/4¼oz caster sugar

• 1 tsp ground turmeric

• ½ cucumber, de-seeded, sliced into half-moons

• 1 tbsp chopped coriander stem

• salt and freshly ground black pepper
