Spiced Summer Fruits With Ginger Shortbread And Mint Cream

Ingredients

Ingredients For the spiced summer fruits
  • 100ml/3½fl oz water

  • 2 tbsp caster sugar

  • 1 tbsp brown sugar

  • 3 cardamom pods, split

  • 1 vanilla pod, split

  • 4cm/1½in fresh ginger, grated

  • ½ tsp ground ginger

  • 150g/5½oz mixed berries (redcurrants, blackberries, blueberries, raspberries), plus extra to serve

  • 2 tbsp chopped fresh mint leaves

For the ginger shortbread
  • 100g/3½oz plain flour

  • 85g/3oz butter

  • 85g/3oz caster sugar, plus extra for dusting

  • 1 tsp ground ginger

  • 1 orange, zest and juice

For the mint cream
  • 150ml/5½fl oz double cream, whipped until soft peaks form when the whisk is removed

  • 2 tbsp icing sugar

  • 2 tbsp Greek-style yoghurt

  • 2 tbsp chopped fresh mint leaves

  • 2 sprigs fresh mint, to serve
