Amaretti-stuffed Pears With Red Wine And Vanilla Sauce


Ingredients For the stuffed pears
  • 1 pear, cut in half lengthways, core removed

  • 5 tbsp crushed amaretti biscuits

  • 1 tbsp white rum

  • 1 free-range egg yolk

  • 2 tbsp red wine

For the red wine sauce
  • 150ml/¼ pint red wine

  • 1 vanilla pod, split, seeds scraped out

To serve
  • icing sugar, to dust

  • Greek-style yoghurt
