Baked Apples With Toffee Sauce And Pineapple Salsa

Ingredients For the baked apples
  • 50g/1¾oz fudge, finely chopped

  • 1 tbsp honey

  • 2 tsp rolled oats

  • 1 Bramley apple, halved, cored and base cut off to create a flat stable base

For the toffee sauce
  • 50g/1¾oz fudge, finely chopped

  • 1 tbsp runny honey

  • 25g/1oz unsalted butter

  • 1 tbsp double cream

For the pineapple salsa
  • 1 carrot, grated

  • 2 pineapple rings from a tin, finely chopped

  • Juice of ½ a lime

  • 2 tsp runny honey

  • 2 tsp red wine vinegar

  • 1 tbsp olive oil

  • 1 tbsp fresh coriander, leaves picked and roughly chopped

  • freshly ground black pepper
