Deep-fried Trout On Sweet Potato Curry

Ingredients

Ingredients For the deep-fried trout
  • vegetable oil for deep frying

  • 100g/3½oz self-raising flour

  • 2 tbsp cornflour

  • 2 free-range eggs, beaten

  • milk, to bind

  • 1 rainbow trout fillet, cut in half diagonally

For the sweet potato curry
  • 1 tbsp olive oil

  • ½ onion, finely chopped

  • ½ sweet potato, peeled and cut into cubes

  • 5 broccoli florets, halved

  • 1 pinch chilli flakes

  • ½ tsp curry powder

  • 100ml/3½fl oz white wine

  • 200ml/7fl oz double cream

  • ½ lime, juice only

  • salt and freshly ground black pepper

To serve
  • lime wedges

  • fresh coriander sprigs
