Ingredients For the duck
  • ½ duck breast, skin scored

  • salt and freshly ground black pepper

  • 1 tbsp honey

  • ½ vanilla pod, seeds only

  • 50ml/2fl oz red wine

  • 1 tbsp chopped fresh oregano

  • 1 tbsp chopped fresh sage

  • 1 tbsp chopped fresh flatleaf parsley

  • 55g/2oz breadcrumbs

For the potatoes
  • 1 tbsp olive oil

  • 5 new potatoes, cooked, sliced into 1cm/½in slices

  • salt and freshly ground black pepper

For the vegetable ribbons
  • 1 tbsp olive oil

  • 55g/2oz peas

  • 1 carrot, peeled, cut into ribbons with a peeler

  • 4 asparagus spears, cut into ribbons with a peeler

  • 15g/½oz butter

  • 50ml/2fl oz white wine

  • 50ml/2fl oz vegetable stock

  • salt and freshly ground black pepper
