  • 100g/3½oz caster sugar

  • 1 lemon, juice only

  • 30g/1oz pectin

  • 200g/7oz dried apricots

For the topping
  • 200g/7oz dark chocolate, broken into pieces

  • 10-12 whole coffee beans
