Aubergine Tempura With Sweet Chilli Salsa


Ingredients For the aubergine tempura
  • 100g/3½oz self-raising flour

  • 4-6 tbsp sparkling water

  • 1 tsp salt, plus extra for sprinkling

  • 300ml/½ pint vegetable oil, for deep frying

  • 1 aubergine, sliced into 0.5cm/¼in rounds

For the sweet chilli salsa
  • 1 tsp white wine vinegar

  • 1 tsp caster sugar

  • ½ tsp chilli flakes

  • 3 tbsp tomato juice

  • ½ lime, juice only

  • pinch salt
