Lamb Shanks With Apricots

  • 4 lamb shanks

  • few sprigs fresh rosemary

  • oil, to fry

  • salt and freshly ground black pepper

  • 1 onion, sliced

  • 4 anchovy fillets, chopped

  • 1 garlic clove, finely chopped

  • 2 tbsp tomato purée

  • splash Cabernet Sauvignon or sherry vinegar

  • 1 x 75cl bottle full-bodied red wine (such as Cabernet Sauvignon or Zinfandel)

  • 15 dried apricots, chopped

  • 750ml/1¼ pints beef or lamb stock

  • 2 sweet potatoes, cubed

To serve
  • mashed potato

  • steamed green vegetables

  • 1 tsp chopped fresh parsley, to garnish
