Aubergine-wrapped Spicy Lamb Sausages With Roasted Cherry Tomatoes


Ingredients For the sausages
  • 500g/1lb 2oz lamb mince

  • 2 shallots, finely chopped

  • 1 garlic clove, crushed

  • 1 heaped tsp ground cumin

  • ½ tsp ground cinnamon

  • ½ tsp ground coriander

  • ½ tsp dried chilli flakes

  • 1-2 tbsp chopped parsley

  • 2 tbsp fresh breadcrumbs

  • 1 small free-range egg

  • sea salt and freshly ground black pepper

  • 1 tbsp olive oil

For the aubergines
  • 2 medium-large aubergines, thinly sliced lengthways

  • olive oil, for brushing and roasting

  • 250g/9oz cherry tomatoes, halved

  • mixed leaf and herb salad, to serve
