Ingredients For the pickled onion
  • 2 onions, finely sliced

  • 250ml/8¾fl oz white vinegar

  • 1 cinnamon stick

  • 2 cloves

  • 15g/½oz coriander seeds

  • 1 bay leaf

  • 1 red chilli

  • 1 tsp black peppercorns

  • 150g/5¼oz sugar

For the aubergines
  • 2 aubergines

  • dash olive oil

  • salt and freshly ground black pepper

  • 2 handfuls watercress

For the dressing
  • 200g/7¼oz sour cream

  • 1 tbsp mild mustard

  • chopped chives, to taste

  • chopped dill, to taste
