Thanksgiving Recipes: Free-Style Fall Fruit Tart

Ingredients

Crust:

  • 1/2 cup unsalted butter
  • 1/4 cup sugar
  • 1 1/4 cup all-purpose flour

Top:

  • 1 pear, peeled and cut into 1/2-inch slices
  • 1 Braeburn apple, or other apple, peeled and cut into 1/4-inch slices
  • 1 tablespoon sugar
  • 2 tablespoons apple jelly

Filling:

  • 4 ounces cream cheese, softened
  • 2 tablespoons sugar
  • 1 large egg yolk
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon almond extract

Cooking Instructions

  1. Heat oven to 350 degrees. For the crust, in a medium bowl with an electric mixer, beat butter and sugar until combined. Add flour and beat until combined. Cover a cookie sheet with parchment, then pat dough into 10-inch circle on prepared cookie sheet.
  2. For the top, gently toss the pear, apple, and sugar.
  3. For the filling, in a medium bowl with an electric mixer, beat cream cheese and sugar until smooth. Add egg yolk, cinnamon, and almond extract and beat until combined and mixture is smooth.
  4. Spread filling on center of dough into 7-inch circle leaving a 1 1/2-inch border of dough. Starting at the edge of the filling, place fruit slices in concentric circles working toward the center. Carefully fold dough edge up over the edge of the fruit.
  5. Bake about 45 minutes until fruit is tender, filling is set, and crust is golden.
  6. In a small saucepan over medium heat, melt apple jelly with a teaspoon of water. Gently brush mixture over top of tart.

Substitution(s)

  • A pear or 2 can be substituted for the apple.
  • An apple may be substituted for the pear.
  • Refrigerated pie dough may be used instead of the crust.

Make-Ahead

  • Use a refrigerated pie crust.

Tips & Tricks

 Chill the unbaked tart 30 minutes before baking. This will decrease the amount the tart will spread during baking. Note: If you do choose to chill it, the tart may take a few more minutes to bake.
 If you do not have a cookie sheet without sides, flip over a sided-cookie sheet and bake the tart on the bottom.
