  • 1 cup shelled peas (optional)
  • 6 Tbs. (3/4 stick) unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups milk, heated
  • 1/2 cup heavy cream, heated
  • Salt and freshly ground pepper, to taste
  • Ground nutmeg, to taste
  • 2/3 lb. lump crabmeat, picked over for shell
  • fragments
  • 3 Tbs. chopped fresh chives
  • 1/2 cup finely shredded fontina or Emmentaler
  • cheese
  • 1/2 cup plus 3 Tbs. grated Parmigiano-
  • Reggiano cheese
  • 1/2 cup plus 3 Tbs. finely shredded white
  • cheddar cheese
  • 1/2 cup fine dried bread crumbs
