- 1-each, small red & yellow bell pepper, seeded & deveined
- 1 small red onion
- 1 English cucumber, peeled and seeded
- 3 /4 cup fresh cilantro leaves, chopped
- 1 medium jalapeno pepper, seeded and deveined, minced
- Dressing:
- 2 Tbs. extra-virgin olive oil
- 2 Tbs. rice-wine vinegar
- 1 tsp. freshly ground black pepper
