Rhubarb Crumb Cake

Ingredients

  • Cooking Time: 35 to 40 minutes
  • 1 1/4 cup brown sugar, packed
  • 1/4 cup white sugar
  • 1/2 cup butter, (she called for shortening)
  • 1 egg
  • 1 cup sour cream
  • 1 tsp. vanilla extract or almond extract (used almond extract)
  • 2 cups unbleached flour
  • 1 tsp. baking soda
  • 1 tsp. baking powder
  • 2 or 3 cups diced rhubarb
  • Topping:
  • 1/4 cup sugar
  • 1/2 tsp. cinnamon
  • 1/4 cup chopped nuts ( used slivered almonds)
