Indoor Grilling: Twice-Cooked Mock Tandoori Chicken

Ingredients

  • 8 chicken thighs, or thighs and drumsticks
  • 2 tablespoons peanut or vegetable oil
  • 1 medium onion, chopped
  • Salt and freshly ground black pepper
  • 4 or 5 garlic cloves, smashed
  • 1 2-inch piece of ginger, peeled and chopped (or use 2 teaspoons dried ginger)
  • 1 tablespoon ground coriander
  • 1 teaspoon ground cardamom
  • 1 tablespoon paprika
  • 1 teaspoon ground cumin
  • Cayenne or chopped fresh chilies or crushed red chili flakes to taste, optional
  • 3 cups plain yogurt
