- 1/4 cup freshly grated Pecorino Romano cheese
- Sea salt and freshly ground black pepper
- 2 tablespoons olive oil, plus more for brushing
- 2 tablespoons Dijon mustard
- 2 tablespoons honey
- 1 tablespoon balsamic vinegar
- 2 large (about 10 ounces each) sweet onions, such as Vidalia or Maui
- 8 to 12 soaked bamboo skewers
