Ingredients

  • 4 large eggs, at room temperature
  • 1 cup delicately flavored olive oil (such as Bertolli Classico)
  • 2/3 cup water
  • 2 cups pureed pumpkin (fresh or canned)
  • 3 cups sugar
  • 3 1/3cups sifted all purpose flour
  • 1 1/2 teaspoon salt
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground cloves
  • 2 teaspoons baking soda
  • 1/2 cup golden raisins or dried cranberries (optional)
  • 1/2 cup coarsely chopped walnuts or pecans(optional)
