  • 1 cup ketchup
  • 1/4 cup water
  • 1/4 cup dried shitake mushrooms
  • 1/4 cup Worcestershire sauce
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup white vinegar
  • 1/2 cup chopped white onion
  • 1 clove garlic, minced
  • 3 tablespoon soy sauce
  • 2 tablespoons dark brown sugar
  • 1 tablespoon dry mustard
  • 2 to 2.5 pounds skirt steak, preferably outside cut, trimmed of excess fat
  • 1/4 cup olive oil
  • Kosher salt and black pepper to taste
