Ingredients

  • 1/2 loaf French or Italian bread (8 ounces), cut into 1/2 inch thick slices; supermarket bread is fine
  • 4 tablespoons unsalted butter, softened
  • 4 shallots or 1 small onion, minced
  • 1 10-ounce package chopped frozen spinach, thawed and squeezed dry
  • Salt
  • Pepper
  • 6 ounces (1 1/2 cups) Gruyre cheese, shredded (Havarti, sharp cheddar, and Colby are also good)
  • 6 large eggs
  • 1 3/4 cups half-and-half
