Apricot Chicken

Ingredients

  • 4 chicken legs and thighs (about 3 pounds)
  • Coarse salt and freshly ground pepper
  • 1/4 cup canola oil
  • 1 yellow onion, halved and thinly sliced
  • 1 large clove garlic, minced
  • 1 1/2 pounds small ripe apricots (10 to 12), quartered and pitted
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon saffron threads
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground coriander
  • 1/4 cup honey, plus more to taste
  • 1 1/2 cups homemade or low-sodium canned chicken stock
  • 1 1/2 cups couscous
  • 1 tablespoon unsalted butter
  • 3/4 cup whole almonds, coarsely chopped
  • Sesame seeds, for garnish
