Apple Charlotte

  • 11 tablespoons unsalted butter, softened
  • 6 pounds tart apples, such as McIntosh or Gravenstein, peeled, cored, and thinly sliced
  • 2 tablespoons fresh lemon juice
  • 1 vanilla bean, split and scraped
  • 3/4 cup sugar
  • 3 tablespoons brandy or Calvados (optional)
  • 1 loaf thin-sliced white bread or brioche
  • Whipped cream, for serving (optional)


The Applesauce Filling Can Be Made Several Days In Advance. You\'ll Need A Charlotte Mold Or Any Other Round, Flat-bottomed Two-quart Ovenproof Casserole.
