- 7 large egg whites
- 3/4 cup sugar
- 3/4 teaspoon cream of tartar
- FOR THE PINEAPPLE SLICES
- 2 1/4 pounds fresh pineapple, peeled thinly
- FOR THE CURD
- 7 large egg yolks
- 3/4 cup sugar
- 1/4 teaspoon coarse salt
- 1/2 cup fresh pineapple juice
- 1 tablespoon fresh lemon juice
- 1/2 cup (1 stick) unsalted butter, cut into small pieces
