Bryan Voltaggio’s Meat Loaf

Ingredients

  • 2 cups diced pineapple
  • 3 Tbs. firmly packed light brown sugar
  • 2 Tbs. rice vinegar
  • 1/2 tsp. garam masala
  • 2 Tbs. tomato paste

  • 1 cup quick-cooking oats
  • 1 cup low-fat milk
  • 2 tsp. canola oil
  • 1 cup diced shiitake mushroom caps
  • 1 Tbs. fresh thyme leaves
  • 1 tsp. thinly sliced fresh sage
  • 1 tsp. finely chopped fresh rosemary
  • 3 garlic cloves, thinly sliced
  • 3/4 cup diced yellow onion
  • 1/2 cup diced carrot
  • 1/2 cup diced celery
  • 1/2 cup diced celery root
  • 2 lb. ground beef (85% lean)
  • 2 eggs, lightly beaten
  • 1 Tbs. kosher salt
  • 1/2 tsp. freshly ground pepper
  • 1 tsp. Worcestershire sauce
  • 1 tsp. Dijon mustard

Description

The Optional Pineapple Glaze, Which Can Be Prepared Up To 1 Week In Advance, Makes A Nice Topping For The Meat Loaf.
