Ingredients

  • 2 cups all-purpose flour
  • 1⁄3 cup sugar
  • 2 tsp. baking powder
  • 1⁄2 tsp. baking soda
  • 1⁄2 tsp. ground cinnamon
  • 1⁄4 tsp. cream of tartar
  • 1⁄2 tsp. salt
  • 3 Tbs. minced crystallized ginger*
  • 1⁄2 cup coarsely chopped toasted almonds
  • 10 Tbs. (1 1⁄4 sticks) cold unsalted butter, cut
    ;into 1-inch pieces
  • 1⁄2 cup heavy cream

  • 5 lb. firm but ripe peaches, peeled and halved
  • 3⁄4 cup sugar
  • 2 Tbs. cornstarch
  • 1 Tbs. fresh lemon juice
  • 1 tsp. ground cinnamon
  • 1⁄2 vanilla bean, split lengthwise (optional)

  • Vanilla ice cream or sweetened whipped cream
