Apple-cheddar Pie

Ingredients

  • 2 1/2 cups all-purpose flour

  • 1 Tbs. sugar
  • 6 oz. white cheddar cheese, finely grated
  • 16 Tbs. (2 sticks) cold unsalted butter, cut
    ;into 1/2-inch pieces
  • 1/3 to 1/2 cup ice water

  • 2 lb. Braeburn apples, peeled, cored and cut
    ;into slices 1/4 inch thick
  • 1 1/2 lb. Granny Smith apples, peeled, cored
    ;and cut into slices 1/4 inch thick
  • 3/4 cup sugar
  • 1 Tbs. fresh lemon juice
  • 3/4 tsp. ground cinnamon
  • 1/4 tsp. freshly grated nutmeg
  • 1/4 tsp. salt
  • 1 Tbs. unsalted butter
  • 3 Tbs. cornstarch
  • 2 Tbs. heavy cream
