  • 1 1/2 tsp. kosher salt
  • 1 cup wheat bran
  • 1 3/4 cups milk
  • 3/4 cup plain yogurt
  • 1/2 cup buttermilk, plus more as needed
  • 3 eggs
  • 6 Tbs. (3/4 stick) unsalted butter, melted and cooled, plus room-temperature butter for serving
  • Canola oil or clarified butter for cooking
