Roast Leg Of Lamb With Red Pepper Sabayon

Ingredients

  • 3 Tbs. minced garlic
  • 1 Tbs. salt
  • 1 1/2 tsp. freshly ground black pepper
  • 2 Tbs. olive oil
  • 1 bone-in leg of lamb, 4 to 5 lb.
  • 1 lemon, thinly sliced
  • 1 roasted red bell pepper, seeded and cut into
    ; ;1-inch pieces
  • 1⁄4 cup dry white wine or vermouth
  • 4 egg yolks
  • 4 Tbs. (1/2 stick) cold unsalted butter, cut into
    ;8 pieces
  • 1/2 tsp. salt
  • 1/4 tsp. freshly ground white pepper
  • 2 tsp. minced fresh mint

Description

You Can Roast Bell Peppers By Holding Them Directly Over A Gas Flame On A Stovetop Or Placing Them In A Broiler. Whichever Method You Use, Turn The Peppers With Tongs Until The Skin Is Blistered And Blackened On All Sides; Be Careful Not To Let The Flesh
