Chicken Sauté With Artichokes

Ingredients

  • 1 lemon, halved
  • 1 lb. small artichokes
  • 3 Tbs. all-purpose flour
  • 2 skinless chicken breast halves, each about
    1/2 lb.
  • 2 skinless chicken thighs, each about 6 oz.
  • 2 skinless chicken drumsticks, each about
    1/4 lb.
  • 2 Tbs. pure olive oil
  • Salt and freshly ground white or black pepper, to
    taste
  • 4 garlic cloves, cut into slivers
  • 1 shallot, cut into slivers
  • 1 Tbs. minced fresh basil
  • 1 Tbs. minced fresh tarragon
  • 1 Tbs. minced fresh chervil
  • 1 Tbs. Dijon mustard
  • 1 cup Sauvignon Blanc or other dry white wine
  • 1/2 cup chicken broth
  • 2 or 3 plum tomatoes, seeded and chopped
  • 1/4 cup chopped fresh flat-leaf parsley

Description

Fresh Artichokes Taste Best In This Dish. If They Are Unavailable, Use About 1 1/2 Cups Thawed, Frozen Hearts Or Drained, Marinated Hearts And Add Them With The Tomatoes.
