- 1/4 teaspoon allspice, for spice mix
- 1/2 teaspoon paprika, for spice mix
- 1/2 teaspoon dried thyme, for spice mix
- 1/2 teaspoon salt, for spice mix
- 150g plain flour, for the roux
- 60g duck fat, could use veg oil, for the roux
- 30g butter, for the roux
