Turkey enchiladas with chilli sauce

Ingredients

For the marinade

  • 2 tbsp chilli oil
  • 1 tbsp hot chilli powder
  • 1 tbsp paprika
  • 1 pinches caster sugar
  • 1 lime, grated zest and juice
  • 500 g turkey breasts, about 4 breast steaks, cut into strips
For the chilli sauce

  • 2 tbsp sunflower oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 red chilli, seeds removed, finely chopped
  • tsp sweet or smoked paprika
  • tsp ground cumin
  • tsp ground coriander
  • 400 g can chopped tomatoes
  • 1 squeeze lemon juice
For the enchiladas

  • 2 tbsp sunflower oil
  • 1 red onion, sliced
  • 1 red pepper, seeds removed, thinly sliced
  • 1 yellow pepper, seeds removed, thinly sliced
  • 8 soft flour tortillas
  • 50 g cheddar, grated
