- 350 g skinless, boneless chicken breasts, (approx. 3 chicken breasts), cut into 2.5cm pieces
- 4 tbsp sunflower oil, for frying
- 200 ml buttermilk
- 1 tbsp fresh lemon juice
- 1 tsp Worcestershire sauce
- 1 tsp soy sauce
- 1/4 tsp paprika
- 100 g plain flour
- 1 egg, beaten with 1 tbsp water
- 75 g dry breadcrumbs or honey panko breadcrumbs
- 45 g freshly grated parmesan
- salt and pepper, to season
- 6 tbsp tomato ketchup
- 2 tbsp maple syrup
- 1/2 tsp Worcestershire sauce
- 1/2 tsp soy sauce
- 2-3 drops tabasco, (optional)
- 4 tbsp mayonnaise
- 1 tsp wholegrain Dijon mustard
- 1 1/2 tsp clear honey
- 1 tsp cold water
