For the sushi vinegar- 140 ml rice vinegar, or Mirin
- 70 g sugar
- 1/2 tsp salt
- 1 tsp concentrated dashi stock or dashi powder
- 675 g sushi rice, (short-grain white rice)
- 900 ml water
- 1/2 sheets yaki nori seaweed, available from specialist Japanese stores and some supermarkets
- wasabi, to taste
- 100 g raw salmon
- 1 roasted red pepper, sliced
- 185 g can tuna
- 2 tbsp mayonnaise
- shiso leaves
