Hoso maki sushi

Ingredients

For the sushi vinegar

  • 140 ml rice vinegar, or Mirin
  • 70 g sugar
  • 1/2 tsp salt
  • 1 tsp concentrated dashi stock or dashi powder
For the rice

  • 675 g sushi rice, (short-grain white rice)
  • 900 ml water
To assemble the sushi

  • 1/2 sheets yaki nori seaweed, available from specialist Japanese stores and some supermarkets
  • wasabi, to taste
  • 100 g raw salmon
  • 1 roasted red pepper, sliced
  • 185 g can tuna
  • 2 tbsp mayonnaise
  • shiso leaves
