  • 1 handfuls sage, leaves only
  • 1 handfuls oregano, plus extra whole leaves for garnish
  • 1-2 tbsp Dijon mustard
  • 300-350 g piece of beef fillet, tied with string
  • 2 tbsp olive oil, plus extra for drizzling
  • 1 beetroot, peeled
  • balsamic vinegar, for drizzling
  • 75 g pecorino cheese
  • 1 orange, preferably a blood orange, halved
