- 10 tbsp unrefined caster sugar
- 1 lemon, pared zest and juice
- 1 1/2 tbsp polenta
- 2 tbsp plain flour
- 1 tsp ground ginger
- 1 tsp baking powder
- 1 egg
- 1/2 tsp pure vanilla extract
- 2 tbsp thick yogurt
- butter or vegetable oil, for frying
- 100 ml crme frache
- fresh pomegranate seeds
