Celeriac and ginger fritters with pomegranate roast grapes

Ingredients

For the grapes

  • 2 large handfuls seedless red grapes, stalks removed
  • 4 tbsp pomegranate molasses
For the fritters

  • 1 celeriac, peeled and cut into 8 chunks
  • 10 tbsp unrefined caster sugar
  • 1 lemon, pared zest and juice
  • 1 1/2 tbsp polenta
  • 2 tbsp plain flour
  • 1 tsp ground ginger
  • 1 tsp baking powder
  • 1 egg
  • 1/2 tsp pure vanilla extract
  • 2 tbsp thick yogurt
  • butter or vegetable oil, for frying
To serve

  • 100 ml crme frache
  • fresh pomegranate seeds
