Ingredients

  • pinch coriander leaves
  • pinch flatleaves parsley
For the fish

  • 1 whole rainbow trout
  • 5 g ginger, sliced
  • 1/2 red chilli, diced
  • 1 tsp coriander seeds
  • 1/2 stalks lemongrass, bruised
  • 1 bay leaf
  • 2-3 sprigs coriander
  • 50 ml white wine
  • 20 g butter, diced
