Windrush-style jamaican bread and butter pudding

Ingredients

For the breadcrumbs

  • 6 thick slices white bread
  • 150 g soft dark brown sugar
  • 75 g desiccated coconut
  • 50 g chilled butter, grated
  • pinch ground cinnamon
For the pudding

  • 3 large eggs, beaten
  • 600 ml milk
  • 1x400 g can evaporated milk
  • 200 g light brown sugar
  • 1 whole nutmeg, freshly grated
  • pinch ground cinnamon
  • 1/2 tsp mixed spice
  • 250 ml single cream
  • 1 shot white rum
  • 1 shot dark rum
  • 1 large white loaf bread, a few days old, thickly sliced
  • 75 g butter
  • 300 g sultanas or raisins, soaked overnight in 50ml rum and water, pinch each ground cinnamon and freshly grated nutmeg
  • 1 can condensed milk
