  • 75 g chopped dried pears
  • 50 g chopped dried pineapple, or mango
  • 1 lemon, grated zest only
  • 1 orange, grated zest only
  • 225 g fresh white breadcrumbs
  • 75 g plain flour
  • 1 tsp mixed spice
  • tsp salt
  • 225 g shredded vegetable suet
  • 225 g soft dark brown sugar
  • 4 large eggs, beaten
  • 1 dash (or two) angostura bitters
  • 55 ml dark rum
  • 55 ml calvados, or cherry brandy
  • 75 ml milk
  • 1 sterilised penny, or sixpence, wrapped in a little greaseproof paper (optional)
